Wander into We Three a charming slice of Mediterranean warmth tucked away on Marrickville’s (Eora) bustling Illawarra Road. 

Dreamt up by Catherine and Ali Gibson Roy, this mother-daughter establishment opens its loving arms to locals mingling over exquisite wines and dishes.  Every decorative detail—from radish-themed artwork to the warm glow of neon—has been meticulously curated by Catherine and Ali to tell a story that invites diner and drinker to listen.

We caught up with Emerson, their bartender gun, to chat about local fun, burst tyres, and his favourite dish.

CP | What do you like most about working at We Three?

E | I mostly enjoy the customer interaction and creating connections with the locals and regulars. It is so fun to exchange stories and learn a bit about what is going on in their lives.

CP | What’s the funniest thing you’ve seen or heard while working?

E | A bus burst its tyre on Illawarra Rd right out the front of the bar on a busy Friday night. All the people had to get off the bus and half of them decided to just come into the bar and have a drink instead of going home.

CP | What dish from We Three would you pair a Normie with?

E | I would highly recommend the Seared Octopus. When I started working here that was my instant favourite!

CP | Describe We Three in three words

E | Cozy. Local. Fun.

CP | What’s your favourite drinking song?

E | Howling Wolf. One bourbon, One scotch, One beer.

CP | Where should we head next?

E | The Marrickville Hotel. Open till 1am, cracking tunes and great vibe. Lots to look at!
